Turkish eggplant with minced meat

STEP 1

How to make Turkish eggplants with minced meat? To begin, prepare the necessary ingredients according to the list. Please note that the exact amount of ingredients depends on the size of the eggplants you choose. My eggplants are medium, not very long. If you have any filling left after stuffing, you can add it to the soup.
STEP 2

Wash the eggplants and dry. Cut the skin off each vegetable in strips, alternating with sections with the skin intact. Make a deep longitudinal cut in each vegetable, without reaching the end.
STEP 3

Sprinkle the eggplants with salt and leave for 20 minutes. Then rinse and dry. Please note that in some cases there is no need to remove bitterness from eggplants - usually young vegetables, as well as some special varieties, are not bitter.
STEP 4

Heat vegetable oil in a frying pan over medium heat. Add the eggplants and fry on all sides until soft and golden brown. Transfer the eggplants to napkins to remove excess fat.
STEP 5

Place the eggplants on a baking sheet lined with foil. Spread the edges of the eggplants where the cut is made to create a depression.
STEP 6

Prepare the ingredients for the filling. You can use any minced meat: lamb, beef or pork, or mixed.
STEP 7

Peel the tomatoes and cut into small cubes. How to quickly peel tomatoes? To do this, you need to make shallow cuts crosswise on them and lower them into boiling water for 1-2 minutes. After this, the skin will come off quite easily.

Cut the onion into small cubes.
STEP 9

Peel the garlic and chop finely.
STEP 10

Heat vegetable oil in a frying pan over medium heat. Add the onion and fry until transparent.
STEP 11

Add minced meat and garlic and stir, breaking up any lumps. Simmer, stirring, for 15-20 minutes.
STEP 12

Add chopped tomatoes and simmer, stirring, for 10 minutes until excess moisture evaporates.
STEP 13

Finally, sprinkle the minced meat with herbs, salt and pepper and stir.
STEP 14

Fill the eggplants with minced meat. Bake the eggplants in an oven preheated to 180ºC for 25-30 minutes.
STEP 15

Sprinkle the finished Turkish eggplants with chopped fresh herbs and serve. Bon appetit!
