    Wash the eggplants and dry. Cut the skin off each vegetable in strips, alternating with sections with the skin intact. Make a deep longitudinal cut in each vegetable, without reaching the end.

    Sprinkle the eggplants with salt and leave for 20 minutes. Then rinse and dry. Please note that in some cases there is no need to remove bitterness from eggplants - usually young vegetables, as well as some special varieties, are not bitter.

    Heat vegetable oil in a frying pan over medium heat. Add the eggplants and fry on all sides until soft and golden brown. Transfer the eggplants to napkins to remove excess fat.

    Place the eggplants on a baking sheet lined with foil. Spread the edges of the eggplants where the cut is made to create a depression.

    Prepare the ingredients for the filling. You can use any minced meat: lamb, beef or pork, or mixed.
