Tomato zucchini soup with meat
Step-by-step preparation
STEP 1
To prepare the soup, it is better to take beef pulp, but the soup can also be prepared from pork and poultry. Wash the meat and cut into medium pieces.
STEP 2
It is better to use a pan with thick edges or a small cast iron. Heat vegetable oil in a saucepan, add meat and fry over high heat, stirring, for about one minute.
STEP 3
Salt the meat, reduce the heat under the pan to low, cover with a lid and simmer until the meat is cooked for about one to one and a half hours. If there is no liquid left in the pan, add a little boiling water as needed. If you use pork or poultry, the cooking time will be reduced.
STEP 4
While the meat is stewing, prepare the vegetables. Peel and wash potatoes, carrots, onions and garlic. Wash the zucchini in the same way; if you use zucchini, you can remove the peel.
STEP 5
Cut the carrots into thin strips, chop the onion finely.
STEP 6
Cut the potatoes into small, if possible, equal cubes.
STEP 7
Cut the zucchini into cubes approximately the same size as the potatoes. Chop the garlic as finely as possible or pass through a garlic press or press.
STEP 8
If the meat is already ready, and there is still liquid in the pan, then turn the heat to maximum, remove the lid and let the excess liquid boil away. Then add the carrots and onions to the meat, stirring and frying for a few seconds.
STEP 9
Then add potatoes and tomato sauce to all the ingredients (you can also use one tablespoon of tomato paste instead of sauce). Mix everything and pour 1 liter. boiling water The amount of water can be adjusted at your discretion, depending on how thick you want the soup to be. After boiling, reduce the heat to medium and cook until the potatoes are ready (about 10-15 minutes).
STEP 10
When the potatoes in the soup are ready, turn the heat back up to high and add the zucchini, garlic and bay leaf to the pan. Taste for salt and add more salt if necessary. Once boiling, reduce heat to low and simmer for about one to two minutes. Remove the pan from the heat, cover with a lid and leave to brew for 15 minutes.
STEP 11
When serving, sprinkle with fresh herbs and pepper if desired. Very tasty with sour cream.
