    Cut the bread into small pieces. Fry in a frying pan with a little oil on one side only. Place toasted bread on paper towels to absorb oil.

    Boil the eggs hard, cool, peel and grate on a coarse grater. Finely chop the onion and add to the eggs. Add salt and pepper to taste. Add mayonnaise and mix well.

    My herring is already ready. If you have a whole one, you need to peel and remove the seeds. Spread the egg mixture onto the toasted side of the bread. Place herring on top and garnish with green onions or herbs. The sandwiches are ready. Bon appetit!
