STEP 1
How to make vegetable noodles with teriyaki sauce? Prepare the ingredients according to the list. Teriyaki sauce can be purchased ready-made in the store or you can make it yourself at home. You will find the recipe after the last step. Vegetables can be used fresh or frozen, the set can be changed according to taste and desire. You can also take any noodles: wheat, rice, buckwheat, etc. Peel the onions and cut into strips or cubes.
STEP 2
Wash, peel and grate the carrots on a coarse grater or a Korean salad grater.
STEP 3
Wash the green radish, peel and cut into small cubes or strips. Place the beans, cut into pieces, in a colander, rinse under running water and dry on a paper towel.
STEP 4
Wash the bell pepper, cut out its stalk and seed pod, and cut the flesh into strips or cubes.
STEP 5
Wash the eggplants, cut into strips, place in a bowl and add salt. Using your hands, toss the eggplants with the salt to release the juices from the vegetables. Leave them like this for half an hour at room temperature. After the specified time, rinse the eggplants and squeeze the juice from them to remove excess bitterness.
STEP 6
Pour vegetable oil into a frying pan and heat it. Place the onions and carrots in the frying pan and fry them over medium heat until soft, stirring occasionally.
STEP 7
Add the remaining vegetables and herbs to the pan with the carrots and onions. Pour in a tablespoon of soy sauce.
STEP 8
Stir everything and simmer over low heat with the lid closed for about 10 minutes.
STEP 9
Meanwhile, boil the noodles in salted water according to package instructions. On average, the cooking time is 8-10 minutes until al dente. But each type of noodle still has a slightly different cooking time and method. Place the cooked noodles in a colander and let the water drain completely.
STEP 10
Place the noodles in a frying pan with vegetables, add chopped garlic and Teriyaki sauce. Stir everything and continue frying for a couple more minutes. Turn off the heat.
STEP 11
Noodles with Teriyaki sauce are ready. Serve the dish with sesame seeds sprinkled on top. Bon appetit!
