    How to make classic tartar sauce with pickles and mayonnaise at home? Prepare all the necessary products. The base of the sauce is mayonnaise, and it must be of the highest quality. It's best if it's homemade mayonnaise of your own making. In principle, you can replace it with sour cream, but in my opinion, then the sauce will lose its “zest”. Both salted cucumbers are suitable for a classic taste, and pickled cucumbers for a spicier taste.

    Squeeze lemon juice into mayonnaise. If you squeeze juice directly from a lemon, wash it with very hot water - this will release more juice from the lemon. And use a small sieve to prevent lemon seeds from getting into the sauce. For ease and speed of preparation, you can also use ready-made factory-produced lemon juice.

    Wash and dry the cucumbers. Cut them into very small cubes. You can grate them on a coarse grater, but then be sure to squeeze out the excess liquid.

    Add chopped cucumbers, mustard and Worcestershire sauce to the mayonnaise. I recommend using regular Russian spicy mustard.

    Add a little salt to the sauce to your taste. Keep in mind that mayonnaise itself is quite salty, and cucumbers also contain a lot of salt. Therefore, perhaps someone will not need salt at all.

    Pepper the sauce. Pepper can be any hot ground pepper. I use a mixture of peppers.

    Wash the greens well, dry and finely chop. If you don’t have fresh herbs available, then you can also take dried herbs in powder form: tarragon, onion and parsley.

    Add chopped herbs to the sauce. To suit your taste, you can add some of your favorite herbs: cilantro, dill and basil. In my opinion, chopped garlic cloves also really come in handy here.

I've never liked tartar sauce from a store or cafe. Therefore, with some doubt, I took on the preparation of Tartar sauce with pickles and classic mayonnaise. True, I was fascinated by the process and really liked it) To prepare the sauce, I used homemade lean mayonnaise with pea brine. I chopped homemade cucumbers very finely. For greens, I have parsley and green onions. Homemade mustard with cucumber brine. To shorten the cooking time, I added ready-made lemon juice. Here I will add that for my taste a teaspoon is enough. But this depends on many factors, of course. You should always add a little at a time and try. For spices, I wanted to add a freshly ground pepper mixture. I was very pleased with the result. The homemade version is much tastier, and even healthier! The sauce is very thick, with pieces of cucumber and herbs. It combines different tastes: salty, sour, spicy. And everything in moderation. The consistency is delicate, very pleasant. I also loved the refreshing flavor of lemon and green onions. We added this sauce to fried potatoes and spread it on pieces of bread.

An excellent sauce, it is perfect for jellied meats and jellied dishes, spicy, thick, rich. And how it goes with the bird! I love it very much and cook it often, but I just make sure to add dill and let it sit under a closed lid so that it soaks in the smell of dill.

Great sauce recipe! I didn’t think that you could cook it yourself, I bought it at the supermarket all the time, and now it’s completely disappeared somewhere. What a blessing that you can cook it yourself, I didn’t think of that at all! Thanks a lot for the tip! I highly recommend that women, especially in the first half of pregnancy, use this sauce to “save themselves” - there is everything for this - salted or pickled cucumbers, lemon, mustard and other spicy things, I would also crumble pickled mushrooms in there.
