Sweet and sour cucumbers in jars without vinegar
Crispy cucumber comes in different varieties, pickled or sweet and sour. Not everyone likes vinegar and vinegar-based marinades. Cucumbers cooked in a citric acid-based marinade do not taste particularly spicy; the marinade turns out softer and slightly sweeter.
You can cook cucumbers and zucchini this way. The main thing is to store jars of citric acid-based preserves in a cool, dark place, such as a cellar.
Step-by-step preparation

Ingredients

Wash the greens, place in a bowl and pour over boiling water.
STEP 3
Wash the cucumbers, trim the stems
STEP 4
Sterilize the jars. Place herbs and allspice peas at the bottom of each jar. Then fill with cucumbers
STEP 5
Wash and boil lids
STEP 6
Prepare the marinade as follows: boil water, add sugar, salt, pepper, and citric acid. Dissolve all ingredients and bring to a boil.
STEP 7
Pour hot marinade over vegetables in jars. Cool for 10-15 minutes.
STEP 8
Then pour the liquid back into the pan and bring to a boil again.
STEP 9
Pour the boiling marinade over the vegetables again, roll up the lids, turn the lids down, wrap and leave to cool.
STEP 10
Store prepared cucumbers in a cool place, preferably in a cellar.

This is the second year I’ve been making this recipe; last year it was a great success. Just make sure to make extra brine; when refilling, there may not be enough
