Summer soup with meatballs, vegetables and herbs

STEP 1

We prepare the necessary ingredients for preparing a delicious and aromatic zucchini soup with meatballs. Place a pan of water on the stove, add salt to taste and bring to a boil.
STEP 2

Not very finely chop the onion and half the green bell pepper into cubes.
STEP 3

Cut one tomato into fairly large cubes.
STEP 4

Grate half the carrots on a coarse grater.
STEP 5

Carefully place the cooked meatballs into boiling water and cook for about twenty minutes.
STEP 6

Place the chopped onion in a frying pan heated on the stove with vegetable oil and fry it over medium heat until golden, stirring with a spatula.
STEP 7

Cut half of the young zucchini into fairly large cubes; if the skin is too thick, you need to cut it off.
STEP 8

Add grated carrots to the frying pan along with the onions, distributing them evenly and stirring with a spatula.
STEP 9

As soon as the carrots are slightly fried, add chopped tomato with bell pepper, seasoning from a mixture of peppers to the pan and mix all the vegetables with a spatula.
STEP 10

Add chopped zucchini to the pan with meatballs and cook for five minutes, then add the prepared vegetable dressing, herbs, bay leaf and garlic to taste. Close the pan with a lid and let the soup brew for about seven minutes with the stove turned off.
