Summer salad with spicy butter

What could be healthier than vegetables from your own garden? I present to you a recipe for a truly summer salad, which I believe can be classified as a “fitness salad.”

    For the recipe you will need all the above vegetables and unrefined hot oil. Spicy so as not to use salt. You can make this oil yourself: add a clove of garlic, a teaspoon of oregano and 5g of hot dry chili pepper to 250 ml of oil. The next day you can use it. The longer the oil sits, the sharper it becomes.

    Let's start with zucchini. If desired, the skin can be removed. Cut the zucchini into thin strips or, like I did, use a carrot slicer and cut the zucchini into thin noodles.

    Next, cut the cucumbers into strips. I didn’t peel the cucumbers so that there would be more color, but you can remove them if you wish.

    Next, cut the squash into strips. I also don’t remove the peel from it, because it’s not convenient to do this due to its shape and it doesn’t get in the way at all.

    Next, cut the tomatoes into fairly large pieces.

    Lastly, chop the prepared lettuce leaves. Place all the ingredients in a deep salad bowl (it won’t be convenient in a small one) and mix. It is convenient to mix with your hands.

    Next, pour hot oil over it. Since my oil is very spicy, I add little of it, and additionally add a tablespoon of regular unrefined sunflower oil. You can also additionally use flax/sesame seeds. Stir gently again so that the hot oil is distributed evenly.

    Salad ready! You can enjoy the summer and eat a healthy salad. Bon appetit!

Anna Ch, what an interesting salad! I’ve never eaten zucchini and squash raw, but I think it’s worth a try, the salad looks so appetizing. And raw vegetables retain more nutrients than after heat treatment. Thank you very much for the recipe and I wish you victory in the competition!!!
