STEP 1
How to make stuffed mackerel in the oven? To prepare this dish we need large fresh mackerel, vegetables and a little vegetable oil

Tackle the vegetables first. Peel the onions and carrots and rinse well under running water, then finely chop the onion and grate the carrots on a coarse grater. If desired, you can add other vegetables to taste or mushrooms, which you also lightly fry in advance.

Sauté the onions and carrots in heated vegetable oil until soft, then add the bell pepper and sauté for another 2-3 minutes. Now is not the season for fresh vegetables, so today I have frozen peppers - very convenient, tasty and inexpensive

So in almost a matter of minutes the filling is ready!
STEP 5
Now is the time to start working on our mackerel. Rinse it well under running water and dry with paper towels. Then, using a sharp knife, make transverse cuts near the head and about 3 cm from the tail, cutting through the ridge

Then make another longitudinal cut along the entire ridge, using a knife to separate the fillet from the bone. Now carefully remove the backbone and entrails of the fish.
STEP 7
Now carefully remove the rib bones using tweezers or just your hands. It is also very important to remove the black film on the belly - it is bitter and can ruin the taste of the finished dish.

Salt and pepper to taste

Add a little olive oil - literally 1 table. l. will be quite enough
STEP 10
Grate the garlic on a fine grater or pass through a press
STEP 11
Rub the mackerel belly well with a mixture of salt, pepper, garlic and olive oil.
STEP 12
Transfer the mackerel to a baking dish, lay out the vegetable filling, grate hard cheese on top, and grease the top with a small amount of mayonnaise so that the cheese crust does not dry out during baking. Bake stuffed mackerel in an oven preheated to 180 degrees for 30 minutes
