Sponge cake with custard, walnuts and poppy seeds

The delicate, soft structure of this cake will not leave anyone indifferent! The cake turns out soft, tasty, aromatic due to such fillings as orange zest, poppy seeds, walnuts, vanilla. In this recipe, I bring to your attention my favorite cream recipe, which I borrowed from Borodina’s book. They gave it to me knowing that I am passionate about baking. Before this, I tried to prepare several different custard recipes, but for layering cakes, this was the recipe I liked the most. I always layer Napoleon with it. The good thing about the cream is that it turns out dense, has a uniform consistency, holds its shape well, and is simply tasty and aromatic. Try making this cake, I hope you like it!

    Break 4 eggs into a deep bowl.

    Beat eggs with sugar, adding a pinch of salt.

    Add sour cream, mix.

    Then gradually, in parts, add pre-sifted flour, mixing thoroughly. At the same time, add soda slaked with vinegar.

    Divide the dough into 2 parts. In one - add poppy seeds. In the other - orange zest. Place the dough (it turns out quite thick) into 2 pre-prepared molds (greased and sprinkled with breadcrumbs). Bake 2 cakes in the oven at 200 degrees. They baked in my oven for 35-40 minutes.

    Cool the finished cakes, cut each into 2 parts. They turn out low, denser than a sponge cake without fillers, so you can soak them in the following syrup: water sugar cognac. (Sugar should be diluted in water until completely dissolved in a saucepan, pour in cognac, bring almost to a boil and remove from heat, cool.)

    You can start preparing the custard while the cakes are baking. Sift the flour and, gradually stirring, heat in a dry frying pan until golden brown. This will give the cream a special aroma, an original nutty flavor and a more beautiful color. Then cool the flour.

    Then sift the flour again (since lumps may appear in the pan during heating) and mix thoroughly with the eggs.

    After mixing with flour, the egg mixture takes on a beautiful mustard color.

    Boil the milk, add sugar, bring to a boil again and pour in the egg-flour mixture in a thin stream, mix quickly and thoroughly (so that there are no lumps) with a whisk. Place the bowl with the cream in a water bath and, stirring, bring the cream to a thick state. I don’t put it in a water bath, but use a steel pan with a thick bottom, it turns out the cream perfectly.

    Add butter and vanilla to the prepared hot cream, mix thoroughly with a whisk, and then cool.

    Assemble the cake, alternating cakes with poppy seeds and cakes with zest. Layer the cakes with cream, sprinkle with chopped walnuts, previously fried in a frying pan.

    Decorate the cake as desired. We prepare tea, coffee and treat ourselves to cake!

Mom with a sweet tooth, thank you for the delicious cake recipe! Sponge cakes with poppy seeds and orange zest - it should be very aromatic and tasty! I often make sponge cakes and they turn out well. Only I have a completely different recipe; I haven’t tried the biscuit with sour cream yet. And I always add baking powder instead of baking soda. And I made custard a long time ago according to a similar recipe, only I heated the flour in butter. It turned out to be a very tasty cream! I forgot about it now, thanks for reminding me!) And with nuts - it would be absolutely great! Thanks again for the good recipe! I will try!
