Sponge cake with bananas
Ingredients
Step-by-step preparation
STEP 1
To prepare the sponge cake, beat the eggs with sugar until fluffy and fluffy.
STEP 2
Sift the flour and add it to the egg mixture in small portions.
STEP 3
Very carefully stir in the flour by hand using a whisk. The mass should remain very fluffy and airy.
STEP 4
Transfer the finished dough into a baking dish (20-22 cm). Place the pan in the oven, preheated to 180 degrees, for about 40 minutes. Check the readiness of the sponge cake with a wooden skewer. When baking, do not open the oven for the first 25-30 minutes, as the sponge cake may fall.
STEP 5
Cool the finished biscuit in a baking dish. You can even cool it upside down so that it does not sag under its own weight. After cooling, remove the biscuit from the mold, put it in a bag and put it in the refrigerator for several hours. This is necessary so that the sponge cake rests and crumbles less when cutting. Before preparing the cake, cut the sponge cake into 4 layers.
STEP 6
To prepare the cream, use cream with a fat content of at least 33%. Otherwise, they will not beat to a creamy consistency. Add powdered sugar to the cream and beat until creamy.
STEP 7
Break the bananas into pieces and mash with a fork. You should not use a blender here, since when chopping the banana will turn into puree and will be liquid. It's best when there are small pieces of banana left.
STEP 8
Then add half of the whipped cream to the bananas. Stir with a fork.
STEP 9
The mass will turn out airy and tender with the aroma of banana.
STEP 10
Soak the sponge cakes a little with sugar syrup or just water and layer with banana cream.
STEP 11
Assemble the cake, frosting all the layers.
STEP 12
Spread a thin layer of the remaining whipped cream on the sides and top of the cake. Place the cake in the refrigerator for a few hours to set and firm up.
STEP 13
To level the cake, prepare another cream. To do this, beat soft butter with powdered sugar. Then add curd cheese and beat everything together into a homogeneous mass.
STEP 14
Use the finished cream to level the cake on all sides. Decorate the cake on the occasion of your celebration. Enjoy your tea!
