    Measure out the spices, cut the meat into large pieces, and the lard into small cubes.

    Pass the meat through a meat grinder.

    Add salt, sugar and pepper to the minced meat. Mix the minced meat and spices well with your hands, or better yet, with a blender.

    Squeeze a clove of garlic into the minced meat and stir. Add in minced meat and pieces of lard. Knead the minced meat one last time until smooth and refrigerate for 1 hour. If necessary, soak the sausage casings.
