You need to defrost it correctly: place the fish from the freezer into the refrigerator for 7 hours and only then defrost it at room temperature.

Wash the mackerel well, gut it and be sure to remove the gills. If you leave them, the fish will have a bitter aftertaste.
STEP 3

Using a very sharp knife, make several diagonal cuts into the skin. Thanks to this, the fish will marinate better and then fry evenly.
STEP 4

From the lemon, we only need lemon juice for the marinade, so you can take ready-made factory-made lemon juice. If you squeeze the juice yourself, first wash the lemon with very hot water - this will release more juice.
STEP 5

Pour vegetable oil over the fish. It can be absolutely anything: from the most budget sunflower to the expensive elite olive. But since we will heat-treat the oil, it is best to use refined oils.
STEP 6

Salt the fish.

Pepper it. At this stage, you can add other favorite spices and seasonings to the fish: Provençal herbs, dried or fresh thyme, garlic.
STEP 8

Leave the fish to marinate for a while. From 15 minutes to 1 day.
STEP 9

Meanwhile, light the wood in the grill. To prepare tasty and healthy dishes, you need to use good firewood for cooking coals, preferably birch.
STEP 10

Wait until the wood burns out and hot coals remain.
STEP 11

Place the grill grate on the grill. Add the mackerel. The fish cooks fairly quickly, but turn it over every 5-7 minutes. This way the fish will not burn and will fry evenly.

The turning procedure may have to be repeated 2-3 times. That is, this needs to be done until the mackerel is completely ready.
