    Let's start preparing the cake with the dough. If you have a food processor with blades, then preparing the dough will only take a few minutes, just put all the ingredients for the dough into the bowl and mix, but my food processor has been refusing to work lately, so I kneaded it by hand. To do this, sift 3 cups of flour into a bowl and grind the butter and flour until it becomes fine crumbs (take the butter straight from the refrigerator).

    Lightly beat the egg with sugar; you don’t have to add it, but then increase the amount of sour cream. Add sour cream and egg with sugar to butter crumbs.

    If the dough turns out too tight, add a little sour cream, and if sticky, add flour, focus on the dough itself, it should be soft, not too tight, wrap the kneaded dough in film and put it in the refrigerator for 30 minutes.

    While the dough is resting, place the pitted cherries (or frozen or canned) on a sieve; if they are sour, then add a couple of tablespoons of sugar, go by the taste and leave to let the excess juice drain.

    We take our dough out of the refrigerator and divide it into several pieces. Roll out the piece into a layer about 3 mm thick.

    We adjust the layer to the size of the future tubes.

    For the cream, I used full-fat homemade sour cream; it can be replaced with heavy cream.

The tubes miraculously curled up like a snail and 4 cakes came out, which I coated with fluffy sour cream. And in combination with the sourness of cherries in their own juice - it’s a bomb!
