    Let's prepare the ingredients. We will cook semolina soup with meatballs made from minced meat. You can prepare the minced meat yourself from fresh meat or buy it ready-made in the store. If desired, to reduce the calorie content of semolina soup, you can use minced poultry. Add salt and ground black pepper to taste to the bowl with minced meat and mix. Make small meatballs with hands moistened with water.

    Wash the potatoes, peel them and cut them into cubes or strips, as you like. The cooked potatoes need to be washed again and excess starch removed so that the broth is light. Place the potatoes in a saucepan and fill with clean cold water. We put it on fire.

    Wash the carrots, peel and grate on a medium grater.

    Peel the onions and finely chop them.

    Pour vegetable oil into the frying pan and turn on the heat. When it warms up, place the cooked carrots and onions in the oil. Fry them until lightly browned.

    Place the fried vegetables in a pan with potatoes. Add spices to taste: salt and black peppercorns. Cook for ten minutes from the moment the water boils over medium heat. Remove the foam from the surface of the broth with a slotted spoon.

    Then add the meatballs in batches to the boiling broth to prevent them from sticking together. Immediately stir the soup with a spoon so that they do not stick to the bottom of the pan. Cook the soup for about 10 more minutes from the moment the broth boils.

    Then pour semolina into the boiling broth in a thin stream. Mix immediately so that the semolina does not form lumps. Cook for about five minutes from the moment it boils. Turn off the fire. Let the soup sit covered in the pan.

I was very surprised when I saw a recipe for soup with semolina on the website. I haven’t cooked first courses with this grain yet. At first I doubted it, but then curiosity took over) Moreover, I needed to cook a light but nutritious soup. I had chicken meatballs in the freezer, so the cooking process took little time. I decided not to fry the vegetables to speed it up. Moreover, my daughter asked me not to add onions. Well, I hardly added anything, I cooked a whole onion. The juice and aroma remained, but the onion seemed to be gone. I was worried about semolina, the recipe calls for 3 tbsp. l. per liter of water. I had 4 liters and for the first time I added 1 tbsp. l. per liter of water. Contrary to my expectations, semolina did not turn the soup into jelly. Small grains simply settled to the bottom, and the broth became a little cloudy. I didn't taste anything unusual. But a delicate consistency definitely appeared! An interesting sensation, as if it were a creamy soup. The children did not notice anything suspicious, they had lunch with pleasure) The soup turned out to be really light, but at the same time satisfying. Now this is a delicious variety of our menu.

Simple and quick recipe. Well, delicious for sure. In general, all soups with semolina are very tasty. In principle, it doesn’t even matter what ingredients are added.
