Ingredients
Step-by-step preparation
STEP 1
How to make buckwheat soba noodles with chicken and vegetables? Prepare all the necessary ingredients. You can use any chicken meat, I have chicken breast and it turns out not dry at all. Chili can be taken dried or just a fresh pod.
STEP 2
Pour water into a saucepan, place over medium heat and bring to a boil. Add a little salt and dip the noodles in whole, like spaghetti, but if you don’t like it that way, you can break it. After boiling again, cook the noodles for about 5-7 minutes. It should be a little undercooked. Drain in a colander and rinse in cold water to stop the cooking process. If the noodles were cooked in advance, brush them with vegetable oil and stir to prevent them from sticking.
STEP 3
Wash the chicken fillet in running water, dry and cut into large strips. Pour oil into a frying pan and heat over medium heat. Add the chicken to the pan and fry for 5-7 minutes, stirring occasionally until browned. Remove the pan from the heat and transfer the chicken to a bowl.
STEP 4
Peel the onions, rinse and cut into half rings. After chicken, return the pan to the heat and put the onion in it.
STEP 5
Wash the carrots in running water with a brush, peel, rinse and cut into strips of medium length and thickness. Add the carrots to the pan with the onions. Stir and stir-fry for 5 minutes.
STEP 6
Wash the bell pepper in running water, remove the stem with seeds and cut into medium strips. Add to the pan with the fried vegetables and stir. Fry everything together for another 3 minutes.
STEP 7
Return the browned chicken to the pan and stir to coat.
STEP 8
Wash and dry the tomato, cut into large slices and add to the pan with vegetables and chicken. Pour water and close the lid, reduce heat and cook for another 10 minutes.
STEP 9
Pour soy sauce, vegetable oil and chili pepper into a bowl, stir. Add chili pepper according to your taste; if desired, you can do without it.
STEP 10
Open the pan and pour in the resulting sauce, stir.
STEP 11
Add the boiled buckwheat noodles to the pan and mix everything well so that the noodles are covered with sauce.
STEP 12
Warm the noodles with vegetables and chicken over medium heat for 1-2 minutes, remove from heat.
