Simple sponge cake

It can be used as the basis of any sponge cake, you just need to soak it in syrup, cream and condensed milk, and decorate it with any cream, sprinkles, or crumbs. The same base is convenient to use for fruit and berry pies. Serve simple sponge cake with tea, coffee, milk, compote.

Step-by-step preparation
STEP 1

Take sugar, eggs, flour and baking powder.
STEP 2

Beat sugar and eggs until foamy.
STEP 3

This can be done with a whisk, fork or mixer, whichever is more convenient for you.
STEP 4

Add flour with baking powder.
STEP 5

Stir until smooth. Let it stand for a bit - 10 minutes.
STEP 6

Pour the dough into a mold lined with oiled baking paper.
STEP 7

Bake for about half an hour at 180 degrees. At the end I usually turn it down to 150.
STEP 8

Cool the finished biscuit slightly, remove the paper and cut into portions.

I baked a simple sponge cake when the guests were almost on the doorstep. I reduced the amount of sugar and flour to 130 g. I beat the eggs with a mixer, but not too much, not like for a regular sponge cake. The baking powder I had was not of very good quality, I realized this after baking - the citric acid crystals included in the composition did not dissolve well and left dark spots on the surface in the finished cake (by the way, the same thing happened to me when using homemade baking powder, so I refused it) and the taste remained slightly sour. I won’t say that this greatly affected the taste of the pie as a whole, rather I’m just sharing my experience))) Because the sponge cake turned out very tasty, I sprinkled it with light cocoa powder on top and decorated it with the rest of the chocolate cream. Great baked goods for tea!
