STEP 1
How to bake shortbread pie with honeysuckle and cottage cheese? Prepare all the necessary ingredients.
STEP 2
Knead the dough. To do this, sift the flour and baking powder with a sieve or using a special mug. This will saturate it with oxygen and remove large particles that may be in the flour.
STEP 3
Add diced butter. Remove the butter from the refrigerator in advance; it should be at room temperature.
STEP 4
Grind the flour and butter with your hands into fine crumbs.
STEP 5
Add egg and sugar. Before using, rinse the egg in warm water and soda, as it may contain harmful bacteria. Knead a soft dough that does not stick to your hands. Depending on the quality and properties of the flour, less or more may be required.
STEP 6
Roll the dough into a ball, wrap it in cling film and place it in the refrigerator for 30 minutes.
STEP 7
While the dough is “resting” in the refrigerator, make the filling. Gently rinse the honeysuckle in water and dry.
STEP 8
Mix cottage cheese with sour cream, sugar and vanilla sugar. I used soft cottage cheese to make the filling softer and without lumps. If you have grainy cottage cheese, rub it through a sieve or punch it with an immersion blender. If you use vanillin instead of vanilla sugar, use it on the tip of a knife, as it can add bitterness to the finished dish.
STEP 9
Mix the curd mass thoroughly.
STEP 10
Remove the dough from the refrigerator, place it in a baking dish (⍉ 18-20 cm), spread it over the bottom, and make sides. You can spread the dough into shape with your hands or by first rolling it into a circle with a rolling pin.
STEP 11
Place the curd mixture on the dough. Spread the filling evenly throughout the dough using a silicone spatula or spoon. Place the mold in the refrigerator for 10 minutes.
STEP 12
Place honeysuckle on the cooled cottage cheese and spread evenly over the entire surface.
STEP 13
Place the pie in an oven preheated to 180°C. Bake the pie for about 40 minutes. Times are approximate, always refer to your oven.
