    Place the meat, peeled onion and one carrot in a large saucepan. Pour in clean water. Place the pan over high heat, bring the water to a boil and cook over medium heat, skimming off the foam, for 1.5 hours. If you can add parsley or celery root, the broth will be even more flavorful.

    Now prepare all the other ingredients. You can replace the sauerkraut with pickled cabbage.

    Peel the potatoes and cut into small cubes.

    Peel the remaining carrots and grate on a coarse grater.

    Cut the second onion into small cubes.

    Wash the dill and parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, such as green onions, cilantro, or use a mixture of different herbs.

    Heat half the butter in a frying pan over low heat. Add sauerkraut, 1 tbsp. l. tomato paste and cumin. Stir.

    Simmer covered for 30 minutes over low heat.

    In another frying pan, heat the vegetable oil, add the onion, carrots, remaining tomato paste, salt and pepper and fry for 5 minutes.

    Remove the finished meat from the broth, separate from the bones and cut into pieces.

    Strain the broth and return to the heat. Place the chopped meat and potatoes into the broth and cook for 10 minutes.

    Heat the remaining butter in a frying pan.

    Add flour and fry, stirring, until golden brown. If you wish, you can skip steps 13-14 and not add flour to the soup. However, as the final result showed, with flour the cabbage soup turns out tastier and thicker.

    Add fried onions and carrots, stewed cabbage, fried flour, chopped garlic, bay leaf and allspice to the pan. Mix everything. The flour should be completely dispersed throughout the soup. Bring to a boil and cook for 6-8 minutes.

Sauerkraut cabbage soup is certainly very tasty! The beef bone broth is rich and aromatic. I didn’t stew the cabbage first, but immediately added it to the pan with the meat. I didn’t separate the bones; my family really likes meat on the bone. I took it out of the broth and browned it in the oven, and then put it on a plate for everyone in portions. I added thickness to the soup using whole boiled potatoes. I added two potatoes to the cabbage soup, then took it out, mashed it with a fork and put it back into the pan. Today for lunch I made a delicious cabbage soup made from sauerkraut. I cooked the broth with beef bones for about two hours. I drained the first broth, it was cloudy. I washed the pan, poured hot boiled water over the bones, added onions and carrots and cooked over low heat. Afterwards, I strained the broth to cut off any small bones. To make it easier, I decided to combine onions, carrots and homemade sauerkraut in one pan. I simmered it for half an hour with the addition of homemade crushed tomatoes and garlic. I put this delicious roast in a pan when the potatoes were ready. I didn’t thicken the soup, even though I like this method. Cabbage soup with sauerkraut has an incredible taste and aroma!
