Salad with sun-dried tomatoes and arugula PP

STEP 1

How to make sun-dried tomato salad? Prepare the ingredients according to the list. You can use store-bought or home-made sun-dried tomatoes, it’s not critical. I recommend taking red salad onions. Choose any cheese to suit your taste; for me it’s Parmesan. Olives can be replaced with black olives, not green ones.
STEP 2

Remove the olives from the brine and dry. Cut each olive in half. Wash and dry the arugula. Remove the sun-dried tomatoes from the oil and dry too.
STEP 3

Cut Parmesan or any other hard cheese into thin petals. I did this using a fish peeler. If you don't want to cut the cheese into pieces, you can grate it.
STEP 4

Peel the onion and cut into strips. Also cut the arugula or tear it into smaller pieces by hand. You can add sun-dried tomatoes whole or chop them.
STEP 5

In a suitable salad bowl, combine chopped arugula, olives, sun-dried tomatoes and onions.
STEP 6

Prepare the ingredients for the dressing sauce. Instead of balsamic vinegar, you can use any table vinegar. Or completely replace vinegar with lemon juice. Instead of olive oil, you can use any other vegetable oil. If you don't want to add sugar to your salad, replace it with something or remove it completely.
STEP 7

In a bowl, combine balsamic vinegar, lemon juice, olive oil, salt and sugar.
STEP 8

Mix the sauce well.
STEP 9

Pour the prepared dressing over the salad.
STEP 10

Mix all ingredients well, distributing the dressing evenly.
STEP 11

Transfer the salad to a serving platter. Sprinkle parmesan slices on top.
