You can use any red fish: trout, salmon, chum salmon, sockeye salmon, pink salmon, etc. Lightly salted or smoked. I have lightly salted trout. I need large, selected eggs. If the eggs are small, take 4 pieces.

Hard boil the eggs, cool and peel. Separate the eggs into whites and yolks. Grate the whites on a medium grater into a bowl.
