STEP 1
How to make a salad with porcini mushrooms and chicken? Prepare your food. Pre-boil chicken meat and cool. It is better to use breast fillet, it is less fatty. How to cook chicken breast? Bring water to a boil in a saucepan and place the meat in it. Add salt. Cook the chicken for 30 minutes at a low simmer over low heat. Mushrooms are suitable both fresh and frozen. Thaw frozen ones first.
STEP 2
Wash the carrots, peel and grate on a coarse grater, cut the pickles into small cubes.
STEP 3
Place the grated carrots in a frying pan, add 2 tablespoons of water and simmer over low heat until soft.
STEP 4
Clean fresh mushrooms from dirt and debris, cut into small pieces and boil for 30 minutes. Then drain them in a colander and cool. Fry the mushrooms in vegetable oil until cooked. My mushrooms were frozen and pre-boiled, I fried them right away.
STEP 5
Hard boil the eggs, peel and finely chop. How to hard boil eggs? To prevent eggs from cracking during cooking, place them in cold water and cook over low heat. Boil the eggs for 9 minutes after boiling, then cover with cold water and cool. A sharp temperature change will make the shell easier to clean. Cut the cooled chicken fillet into small cubes.
STEP 6
Grind the peanuts in a blender. You can dry it a little in a dry frying pan before doing this.
STEP 7
In a salad bowl, combine chicken, mushrooms, eggs, cucumbers and carrots.
STEP 8
Season the salad with mayonnaise and mix. If time allows, put it in the refrigerator to soak for 2 hours.
STEP 9
Place the salad on a plate using a food ring and press it down well. Sprinkle the top of the salad with chopped peanuts.
STEP 10
Remove the ring and serve the salad. Bon appetit!
