Place the lettuce leaves in a salad bowl.

    Wash the cucumbers under running water and dry. If you have young summer cucumbers, then you don’t have to peel their skins. Cut the cucumbers into thin half rings.

    Wash the green onions and parsley under running water and dry. Finely chop the greens. Instead of onions and parsley, you can use any other greens: for example, cilantro or dill will work well here. Fresh herbs will give this light salad new notes of taste and unsurpassed aroma.

    Drain the jar of olives; you won't need it. Cut the olives into rings. It is better to choose pitted olives, as they will be easier to work with. Olives with various fillings inside are also available for sale: with anchovies, lemon or sweet red pepper. If you choose a non-classic version of olives, then, in my opinion, the version with lemon filling is best suited here, you can experiment.

    For the dressing, mix olive oil (you can use any other oil at your discretion), finely grated garlic and just a little lemon or lime juice. What to choose: lime or lemon is up to you. Lime is more fragrant, and lemon is more familiar to us. Season the salad with the resulting dressing, salt and pepper to taste. Serve this salad immediately.

A wonderful light cucumber and olive salad! I liked the idea of ​​tearing the Chinese cabbage leaves with my hands instead of cutting them as usual. The result was airy, delicate petals! I added chopped fresh cucumber, aromatic parsley, and green onions for spiciness. The addition of olives confused me, but my husband liked this combination) And the dressing is simply delicious, I love this combination, although I didn’t have any lime, I added lemon juice. The salad is very light both in appearance and in digestion. I served it for dinner, a wonderful vitamin supplement!
