Royal sour cream cake

STEP 1

Ingredients for the dough. In this royal recipe, we bake each cake separately, since we use different ingredients as a filling for each. But we always start the same way: beat the egg with sugar, add flour, sour cream (pre-quench the soda in the sour cream) and knead the dough. Next, this dough goes: either cocoa, or nuts, or cinnamon, or raisins, or poppy seeds. Each cake is baked separately at 180 C for 25-45 minutes.
STEP 2

If you chose raisins for one of the cakes, you first need to soak them in boiling water for about 10 minutes. Clean them of debris and tails.
STEP 3

We are preparing the cakes. Beat the egg with sugar.
STEP 4

Add soda to the sour cream, thereby extinguishing it, mix well. If you took the sour cream straight from the refrigerator, you need to warm it up to room temperature.

After mixing sour cream and soda, the mass will increase.
STEP 6

Mix the egg mass and sour cream.
STEP 7

Add sifted flour, mix well until smooth.
STEP 8

Add raisins to the first batch for the crust and mix.
STEP 9

Line the mold with parchment paper, grease it with oil, and pour out the finished dough. Bake at 180 degrees for 30-40 minutes until done.

In the second batch I added chopped walnuts and cocoa. Cocoa here is an additional dry ingredient, so the dough will turn out thicker; when kneading, you can reduce the amount of flour or add a couple of tablespoons of water.

We bake the same way.

For the third crust I used poppy seeds and chopped apple.
STEP 13

We also bake the crust. This cake will be softer and the apples will make it moist.
STEP 14

Making cream. Beat the softened butter with a mixer, then gradually pour in the condensed milk and beat until smooth.
STEP 15

When the 3 cake layers have cooled, cut off the tops to level the top. This will also help better soak those cakes where the crust is tough. We leave the trimmings for crumbs.
STEP 16

Assembling the cake. Spread the cream on each cake layer and smooth it out. Cover with the second cake layer, coat it, then line the top of the third layer with cream and coat the sides of the cake.
STEP 17

Dry the cake scraps, put them in a bag and run a rolling pin over it to chop it up. You can also use a wooden masher. We take the tray with the cake in one hand, take the biscuit crumbs in the other and sprinkle the cake.
STEP 18

Decorate the cake at your discretion. I sprinkled crumbs onto 4 segments of the cake. I cut the apples into thin slices, boiled them for 5 minutes in sugar syrup, and cooled them. I rolled 4 slices into a roll - it turned out to be a rose, I made 3 roses and placed them in the center. I laid out 3 slices like a fan in 2 rows.

Leave the cake for soaking.
