STEP 1
Let's prepare the ingredients. Kefir and chicken eggs must be removed from the refrigerator in advance; they should be at room temperature. You can use absolutely any jam according to your taste and availability. Sea buckthorn jam shows itself very interestingly in such a cake; it not only gives a pleasant shade to the dough, but also makes the cake taste unusual and pleasant.
STEP 2
Add soda to the bowl with kefir, mix and let the alkaline reaction occur, leaving the kefir while performing the next step. During the alkaline reaction, the kefir will begin to bubble and seethe, the mass will increase in volume, so the bowl must be deep. In another bowl, beat chicken eggs with sugar until the sugar is completely dissolved and the mass turns white.
STEP 3
Pour kefir into the bowl with the egg mixture and add jam. Mix the mass. This can be done with a simple whisk or mixer; the second method will reduce cooking time. If the jam is very sweet, the amount of sugar can be reduced.
STEP 4
Beat everything with a mixer or whisk until smooth.
STEP 5
Add sifted wheat flour. And mix the dough well. It should have the consistency of thick sour cream and be homogeneous, without lumps. If the dough is cooked correctly, it should bubble a lot.
STEP 6
We bake the cakes in a rectangular shape. It is best to divide the entire volume of dough into two parts and bake two cakes, then they will turn out smooth, fluffy and well baked. Grease the mold with butter or cover it with parchment. Pour out half the dough.
STEP 7
Place the pan with the dough in an oven preheated to 180 degrees for 25 minutes. Check the readiness of the cake with a wooden skewer. If it comes out dry, the cake is ready. We take it out, cool it and remove it from the mold. It is better to cool the cake in an upside down form so that the dough does not settle.
STEP 8
Cut the cakes into two halves and lengthwise into two parts.
STEP 9
Meanwhile, prepare sour cream. Combine sour cream with sugar, add a pinch of vanillin and beat the cream with a mixer until the mass increases in volume. Spread sour cream on one side of each cake. We leave half of one cake for decoration.
STEP 10
Spread the cakes with cream and roll them up. There is no need to pre-soak them with syrup; they turn out moist. We also grease the cake with cream on top and sides. Sprinkle with dough crumbs. Let it cool in the refrigerator, preferably overnight.
STEP 11
From half of one cake we make the legs of a stump, glue them onto the sour cream. Melt the chocolate in a water bath and pour it over the stump. Decorate the top of the cake with sour cream, biscuit crumbs and fresh strawberries. The cake is ready.
