Add zest (adjust the amount of zest to your taste) and add orange juice if desired (you don’t need a lot of juice, just to enhance the taste).

Add flour with baking powder. It is better to use whole wheat flour.

Stir until smooth.

Add milk until the pancake batter becomes thick.

Leave the dough to rest for 15-20 minutes. Add vegetable oil and mix.

Fry the pancakes in a well-heated frying pan until cooked on both sides.

From this amount I got 15 thin pancakes with a diameter of 24 cm. Serve pancakes with jam, condensed milk, honey. Bon appetit!

I would like to thank the author for the detailed recipe shown. I make the dough the same way, egg flour milk, so I’m confident in it :)). I would like to say, since pumpkin puree is used, you should have said a few words about how and where you got it. I found something new for myself in the recipe, “resting” the dough, if it’s not difficult, tell me why I need to wait 15 minutes? Apparently the pancakes turned out great, thank you.

Pumpkin puree is very easy to prepare, cut the pumpkin into medium pieces, add water so that it is level with the pumpkin and cook for 15 minutes until tender, drain some of the water. I grind the pumpkin in a blender; if the puree turns out thick, I add the drained broth. You can also buy pumpkin puree; it is sold in baby food. And we leave the dough to rest so that the gluten of the flour swells, this helps make the dough more elastic and the pancakes do not tear when turned over
