STEP 1
How to make potato gnocchi? Prepare your food. It is better to choose old, starchy varieties of potatoes - the dough from them will be more viscous. You can use spinach either fresh or frozen. Instead of a regular tomato, a few cherry tomatoes will do.
STEP 2
Rinse the potatoes well with a brush under the tap. Then, without cleaning, place in a saucepan, cover with clean cold water and cook over medium heat. After boiling, cook the potatoes for 25-30 minutes, depending on the size of the tubers. Check readiness with a knife - the blade will easily pierce and come out of the cooked potato. STEP 3
Carefully remove the skins from the hot potatoes so as not to burn yourself. Mash the peeled potatoes with a masher, add salt and egg. Stir the egg into the puree.
STEP 4
Add flour to potatoes in portions, stirring quickly after each portion. Try not to even knead, but to combine the potato mass with the flour using folding movements. As a result, you should get a homogeneous dough, not liquid or thick, a little sticky, but holding its shape. You may need a little less or more flour, depending on the required consistency. STEP 5
Form some of the dough into a sausage on a floured board.
STEP 6
Cut it into small pucks. Dip each piece in flour.
STEP 7
Boil the gnocchi in salted water - as soon as they float, remove them to a plate with a slotted spoon. Cook the gnocchi in batches so they don't stick together too much.
STEP 8
Prepare the sauce. Heat vegetable oil in a frying pan. Place chopped garlic into it. Fry it until fragrant, then remove - the garlic is only needed for the smell. How to choose the right frying pan and oil for frying, read the articles at the end of this recipe.
STEP 9
Place chopped spinach in oil. And behind it are diced tomatoes.
STEP 10
Pour a couple of tablespoons of the water in which the gnocchi was cooked into the pan. Season the sauce with salt and pepper, I also added a pinch of sugar to neutralize the acidity of the tomatoes. Boil it for a few minutes until the tomatoes are completely softened.
STEP 11
Place the boiled gnocchi into the sauce, stir gently and heat everything together.
STEP 12
Serve potato gnocchi with tomato sauce. Bon appetit!
