Potato babka in the oven with minced meat

From simple products, for the whole family, for dinner! Potato babka is a national Belarusian dish. It is prepared according to the same principle as potato pancakes, only in a larger portion and in the oven. The most flavorful babka is, of course, made in a rustic oven. But even in the oven it will turn out very tasty.

    How to make potato babka with minced meat in the oven? Prepare all ingredients. Minced meat in this recipe uses pork, but it can be replaced with chicken or beef, category C1 egg. I used a ceramic mold measuring 20*15.5 cm.

    First prepare the meat filling. How to make the filling? Peel one onion and garlic. Cut the onion into cubes, chop the garlic. Pour vegetable oil into the frying pan and heat it. Fry the onion cubes for 4 minutes over low heat. Then add the chopped garlic and fry everything together for another 1 minute so that the garlic releases its aroma. There is no need to fry vegetables too much. Read below for how to choose a frying pan and oil.

    Place the minced meat in the pan with the steamed vegetables and, breaking up any lumps, fry the meat until it loses its red color. While frying, salt the meat filling. When the filling is ready, remove the pan from the heat and set aside until you collect the potato babka.

    Now start preparing the potato base. Wash the potatoes, peel them, also peel the onions and rinse under water. Please note that the recipe indicates the weight of already peeled potatoes.

    Cut the potatoes and onions into several pieces so that their pieces pass through a meat grinder. Using a wire rack with fine holes, pass the vegetables through a meat grinder. If you don’t have a meat grinder, then grate the vegetables on the finest grater. In this case, it is better to grate the onion first, which will prevent the potatoes from darkening. Stir the potato mixture from time to time so that the onion juice mixes evenly with the grated potatoes.

    Transfer the resulting mass into a sieve and, pressing the potato mass with a spoon, squeeze out a little juice. This will remove excess starch from the dish. But don't overdo it, or the potato babka may end up very dry. Return the potato mixture to the bowl.

    Beat a chicken egg into the potato mixture, add flour and salt to taste. Mix thoroughly to obtain a homogeneous mass.

    Prepare the form. Using a pastry brush, thoroughly grease the bottom and sides of the pan with vegetable oil. You can use any form: duck pan, cast iron, ceramic form, baking sheet and even pots. Place half of the potato mixture into the greased pan and smooth out slightly. Place the next layer of meat filling, also distributing it evenly. Place the remaining potato mixture in the last layer. Gently level again without mixing the layers.

    Place thin sheets of butter on top of the potatoes. Place the pan with the potato babka in an oven preheated to 180°C and bake for about 50-60 minutes. Time and temperature are approximate, be guided by the operating characteristics of your equipment. Read more about this in the article at the end of this recipe. During this time, the mass should set and turn golden.

    After the specified time, remove the potato babka from the oven, cut it into portions and serve hot with sour cream.
