STEP 1

STEP 2

Cut the pork into large pieces.
STEP 3

Peel the onion and chop coarsely. Chop coarsely. I cut it into 6-8 pieces. If the bulbs are not large, then they can be put in whole.

Wash the carrots, peel and cut into large circles.
STEP 6

When the pork is fried until golden brown, add chopped onions and carrots, stir and fry everything over medium heat for 2-3 minutes.
STEP 7

Wash the bell pepper and remove the seeds. Cut the pepper into large pieces.
STEP 8

Add the pepper to the cauldron with the rest of the ingredients, stir and fry everything together for about 4-5 minutes.

Peel, wash and coarsely chop the potatoes. My potatoes are large, I cut them into 6 pieces, maybe larger.

Place the potatoes in the cauldron with the rest of the ingredients and mix everything thoroughly.

Simmer the meat and vegetables under the lid over low heat for about 15 minutes.
STEP 12

After 15 minutes, pour 2 liters of water into the cauldron and bring to a boil.
STEP 13

Immediately add salt to taste.

Remove any foam that forms with a spoon or slotted spoon.
STEP 15

Season the soup with hot chili pepper if desired. Cook the shurpa over low heat for about 1.5 hours, skimming off the foam as needed.

Wash the tomatoes and remove their skins. To do this, make a cross cut on each tomato and scald them with boiling water. Then plunge the tomatoes into cold water for 10-15 seconds. After this, removing the skin from them will not be difficult.

Cut the tomatoes into 4 parts.

After 1.5 hours, put the tomatoes in the shurpa and cook for another 3-4 minutes.

Chop the garlic in a way convenient for you. I crushed it with the flat side of the knife and cut it

Place the chopped garlic in a cauldron.

Rub the zira between your fingers (this way it will release its aroma better) and add to the shurpa.

Add ground black pepper to taste.

Wash the greens, dry and finely chop. Place the chopped greens in a cauldron, leaving a little portion for decoration in the soup.

Add bay leaf to the shurpa and cook for another 1 minute.

Turn off the heat, cover the cauldron with a lid and let the soup brew for 10-15 minutes.
