    Heat the vegetable oil in a cauldron and fry the pork over medium heat until golden brown. If you have meat with fat, then cut it off, melt over medium heat until cracklings are formed and fry the meat in it.     Peel the onion and chop coarsely. Chop coarsely. I cut it into 6-8 pieces. If the bulbs are not large, then they can be put in whole.

    Simmer the meat and vegetables under the lid over low heat for about 15 minutes.

Very tasty soup! The broth is clear, rich, soft and very appetizing. The meat is tender, you can even eat it with your lips. I prepared shurpa by taking a pork rib and a little pulp. Fried in a cauldron in vegetable oil. Added onions and carrots and fried for 7 minutes. Then I added potatoes and tomatoes to the cauldron. I had frozen tomatoes, so I put them in earlier than indicated in the recipe. Stew meat and vegetables under the lid for 15 minutes. After that, I poured 1.5 liters of hot water into the cauldron, salted it, added salt and seasonings for the soup. I cooked pork shurpa at home for 1.5 hours over low heat. At the end, I added a bay leaf, let the soup simmer for 5 minutes and removed it from the stove. I did not add bell peppers, garlic, chili peppers, cumin and herbs.
