STEP 1
How to make baked pork knuckle with potatoes in the oven? Prepare your food. Wash the knuckle thoroughly first. I removed the skin from mine, it was too rough. If the skin is soft and thin, you can cook directly with it. For spices, I took black pepper and paprika. You can use absolutely any combination, it’s a matter of taste and preference.
STEP 2
Using a knife, make punctures all over the leg. Stuff the shank with garlic, inserting the peeled cloves into the resulting slits.
STEP 3
Mix salt and spices. If you have skin on the shank, you can add a little vegetable oil so that the resulting mixture sticks well to your leg.
STEP 4
Coat the knuckle on all sides with the mixture. if you have enough time, then leave the shank to marinate for several hours, it is even better to leave it like this overnight. But you can bake it right away, everything will still turn out great.
STEP 5
Cut the peeled potatoes into halves or quarters, depending on their size. Young small potatoes can be left whole. Add salt and stir.
STEP 6
Place several layers of foil overlapping on a baking sheet. Place the shank in the center. Scatter the potatoes around.
STEP 7
Wrap the knuckle with potatoes in a thick envelope, tucking the edges well so that the juice does not spill out during baking. Additionally, wrap in another layer of foil for security.
STEP 8
Bake the shank with potatoes for 2 hours at 180°C. Then unfold the foil, turn on the grill or convection mode and bake for another 30 minutes until golden brown.
