Pork in pomegranate sauce in the oven

The sauce is the real gem of this recipe! A real New Year's dish for those who like a combination of meat and fruit and berry sauces. This was the first time I made such a sauce using pomegranate juice. It turned out very tasty and aromatic. The sauce is simply divine: with a slight bitterness inherent in pomegranates.

    Prepare the ingredients. To cook pork in pomegranate sauce in the oven we will need: pork on the bone (I already have carb cut into 5-6 mm slices)

    Rinse the pork on the bone and dry it. Lightly beat with a hammer on both sides. At the same time, you need to try to ensure that the meat does not separate from the bones.

    Salt and pepper the meat.

    Heat olive oil in a frying pan. Add the pork and fry over high heat for 4-5 minutes on each side until golden brown. If the oil splatters heavily, cover the pan with a lid.

    Place the chops in a pan lined with foil. Place in the oven and bake until the meat is cooked for about 25 minutes at 180°C.

    Sauce. To prepare the sauce we will need: pomegranate juice

    Leave 1-2 tbsp in the pan. l. fat from pork. Drain off all remaining fat. I didn’t have to drain anything, since there was little fat left after frying. Pour pomegranate juice into the pan, add honey, balsamic vinegar and a sprig of rosemary. Over medium heat, bring the sauce to a boil. Reduce heat and simmer for about 7 minutes until the sauce thickens. Remove the pan from the heat.

    Strain the sauce through a sieve, thus removing the rosemary needles.

    Pour the sauce into the hot frying pan. Add a knob of butter and stir until the butter dissolves.

    Place the chops on plates. Pour hot pomegranate sauce on top. Sprinkle the dish with rosemary needles and pomegranate seeds. Bon appetit!
