    Cut the onion into half rings, grate the carrots on a coarse grater, cut the celery into small cubes.

    Cut the pollock fillet into medium pieces. Grease a baking dish with vegetable oil. Place the fillet, salt and pepper.

    Fry the vegetables in vegetable oil until half cooked, add tomato paste, salt and pepper. Fry for a few minutes, add a little water, simmer covered for 5 minutes.

    Place vegetables on top of fish fillets. Bake in the oven at 180 degrees for 25-30 minutes. If the vegetables start to burn, cover the top with foil. When serving, garnish with parsley.

I really liked the pollock fillet with vegetables in the oven! I made this dish for dinner. I didn’t have celery, but I wanted to add some bright note to the vegetable coat, so I took some frozen bell pepper and dry oregano. Instead of tomato paste I used grated fresh tomato. I laid out the pollock pieces in a greased dish, spread the steamed vegetables on top and put them in a preheated oven. I cooked it very quickly - about 15 minutes (to determine readiness, I pierced the fish several times with a wooden stick). Excellent result! I recommend the recipe!
