STEP 1

How to make a pie with lemon filling? First, knead the dough. Prepare the necessary ingredients. Be sure to sift the flour to saturate it with oxygen. The butter should be cold from the refrigerator. Scald the lemon with boiling water and use a fine grater to remove the zest from it, without touching the white part, otherwise it will taste bitter.

Grate cold butter into the flour on a coarse grater. Quickly chop with a knife or grind into crumbs with your hands.

Squeeze the juice from half a lemon and pour into the dough. Beat in one egg.
STEP 4

Knead the dough. If necessary, add a tablespoon of cold water. The dough should be soft, slightly sticky to your hands. Transfer the dough into the mold (no need to grease it with anything). Use your hands to spread it over the bottom, forming sides. Place the mold with the base in the refrigerator for 15 minutes. Next, place the parchment on the base and add a load, such as peas or beans. Bake in an oven preheated to 200C for about 10-15 minutes. Remove the weight and bake for another 5 minutes.
STEP 5

While the shortbread is baking (check your oven to make sure it doesn't burn), prepare the filling. Prepare all the necessary ingredients. Also wash the lemons and scald with boiling water. Remove chicken eggs from the refrigerator in advance; they should be at room temperature.
STEP 6

Finely grate the zest from the lemons, leaving the white part intact.
STEP 7

Mix sugar and lemon zest in a container. Leave for 15 minutes.
STEP 8

Squeeze the juice from the lemons (the amount of juice came out to be almost a full glass).
STEP 9

Add flour to the sugar and zest mixture and stir. Pour in lemon juice and stir again.
STEP 10

Beat in the eggs and beat with a whisk or fork until smooth.
STEP 11

Leave the lemon-egg filling for 15 minutes until the sugar dissolves.
STEP 12

Pour the lemon filling into the prepared sand base. Bake at 160 degrees for about 30 minutes. Baking times may vary as everyone's oven bakes differently.
STEP 13

Remove the finished pie from the oven and cool completely, and only then carefully remove it from the pan onto a plate. Serve lemon pie with tea. Delicious!
