Pie with frozen currants made from shortcrust pastry

STEP 1

Prepare ingredients for the pie. You can take the currants directly frozen, the recipe is designed just for this. But remove the butter from the refrigerator in advance, it should soften. Instead of sugar, you can put powdered sugar in the crust. You can take potato starch, you need half as much of it.

Sift the flour.
STEP 3

Add baking powder and sugar. Stir.
STEP 4

Divide the eggs into whites and yolks.
STEP 5

Add softened butter and yolks to the flour mixture. Using a fork, mix the flour with butter and yolks until crumbly. You can do this with a knife, making chopping movements.
STEP 6

Then knead the dough with your hands. It will quickly gather into a ball.
STEP 7

Lightly grease the baking dish with oil. Spread the dough over the bottom and sides. This is very easy to do, the dough is very soft and elastic. Cut pieces of equal thickness from the dough and cover the bottom with them, pressing lightly with your fingers. Form the sides in the same way. Place the pan with the dough in the freezer for 20 minutes.
STEP 8

Preheat the oven to 200°C. Bake the crust for 15-20 minutes until lightly golden brown. Remove the crust from the oven. Don't turn off the oven.
STEP 9

Using a whisk, beat the egg whites until white.
STEP 10

Add sugar and starch, stir well. Whisk again.
STEP 11

Add berries to protein mixture. Stir.
STEP 12

Place the filling onto the slightly cooled crust and spread it evenly using a spatula.
STEP 13

Bake the pie for another 10-15 minutes. The filling should harden.
