Pickled zucchini without sterilization in jars
Step-by-step preparation
STEP 1
How to make pickled zucchini without sterilization in jars for the winter? Prepare the necessary products. For pickling, use whole zucchini without damage. Take filtered or bottled water, the taste of the snack itself will depend on this. Read the article on this topic for useful information about winter preparations. Link at the end of the recipe.
STEP 2
Wash the zucchini thoroughly and dry. If you are using young zucchini, you do not need to remove the skin. Peel mature specimens and remove seeds. Cut the zucchini crosswise into circles approximately 1 cm thick. If the circles are too wide, cut them in half.
STEP 3
Peel the garlic from husks and films, rinse. If you prefer a spicier snack, increase the amount of garlic.
STEP 4
Sterilize the jars. An article on this topic will help you choose a sterilization method. Link at the end of the recipe. Fill the lids with water and boil for 5 minutes. Rinse the horseradish leaves and dill umbrellas in running water. Place spices and herbs at the bottom of the jars. In each jar, place one leaf of horseradish, an umbrella of dill, half a bay leaf, two cloves of garlic and three peas of allspice. If the jars are larger than mine in volume, then increase the amount of spices and herbs.
STEP 5
Place zucchini slices tightly on top of the spices. Try to fill as much space as possible. But so as not to break the zucchini.
STEP 6
Boil purified water in a kettle or saucepan and pour it into the jars to the very top. Pour water into the center of the jar, otherwise the glass may burst due to temperature changes. Cover the jars with sterile lids and leave for 10-15 minutes.
STEP 7
Drain the jars into a measuring jug to measure the amount of liquid. Be careful, the jars are hot! Use dry towels and oven mitts. Based on the amount of drained water, add salt and sugar. To calculate, use the site's calculator. Boil the marinade and pour in vinegar. I have essence, so I diluted it to the desired concentration. A vinegar concentration calculator is also available on the website.
STEP 8
Boil the lids again. Pour the boiling marinade into the jars to the very top and screw the lids on tightly. If you do not have screw caps, then use a special key. Turn the jars upside down and wrap them in a warm blanket or blanket. Leave until completely cool.
STEP 9
Store finished pickled zucchini in the cellar or pantry. They don’t need much time to ripen, so you can taste a delicious snack in just a few days. Serve zucchini with meat, poultry, or just for a snack. Bon appetit!
