  1. STEP 1

    STEP 1

How to pickle cucumbers for the winter without sterilization? First, prepare the cucumbers. It is better to choose them in small sizes. Wash the cucumbers well and soak for 2-3 hours in regular cold water to make them firm and crispy. Then cut off the ends of the cucumbers on both sides. You will learn useful life hacks about winter preparations in the article at the end of this recipe.

  2. STEP 2

    STEP 2

Wash the jars with soda, but do not sterilize. The lids can be boiled in a pan of water for 5 minutes. You can preserve cucumbers in either a liter or a three-liter jar.

  3. STEP 3

    STEP 3

Prepare the necessary seasonings and spices. Wash and dry the leaves. Cut the hot pepper into rings. Divide the garlic into cloves and peel them.

  4. STEP 4

    STEP 4

Place 2-3 cherry leaves and 3 currant leaves in each liter jar. Next, add 2 hot pepper rings, 3-4 cloves of garlic and 3 allspice to each jar.

  5. STEP 5

    STEP 5

Place the cucumbers tightly among the jars.

  6. STEP 6

    STEP 6

Boil 1.5 liters of water in a kettle or saucepan. Fill jars of cucumbers with boiling water to the top, cover with lids and leave for 15 minutes.

  7. STEP 7

    STEP 7

After 15 minutes, drain the water from the jars into the pan. To do this, it is convenient to use a special lid with holes. Place the pan on the fire and bring the water to a boil. Pour boiling water over the cucumbers again and leave for 15 minutes. After 15 minutes, drain the water and measure its amount. Check how much water has boiled away.

  8. STEP 8

    STEP 8

Add water to 1.5 liters (one liter jar takes about 0.5 liters of marinade). Add salt and sugar and stir until dissolved. Place the pan on the fire and bring to a boil.

  9. STEP 9

    STEP 9

While the marinade is boiling, add dry dill seeds and mustard seeds to each jar, and also pour in 1.5 tablespoons of vinegar. Pour boiling marinade into jars.

  10. STEP 10

    STEP 10

Immediately cover the jars with lids and roll up. Turn the jars upside down and cover with a blanket or thin blanket. Leave them like this until they cool completely. The cucumbers will be completely ready in about a month. Good luck with your preparations and bon appetit!

Thank you very much for the detailed, up-to-date recipe. You can pickle cucumbers together with tomatoes. In winter, a jar of such preservation will be in great demand!

I packed pickled cucumbers for the winter without sterilization in liter jars. It is very convenient, not heavy, and in winter such a jar is eaten at one time. I also always pre-soak cucumbers for three hours in cold water. Even limp fruits are then saturated with moisture and become crispy when ready. By the way, the same procedure helps the wilted greenery to recover). I sterilize the jars over steam and boil the lids. This time, for greens, I had cherry and horseradish leaves, as well as dry dill umbrellas with seeds. I couldn't find any mustard seeds, but I like to add them. They give a pleasant spicy flavor and help the brine remain clear. I liked the brine itself; the cucumbers will be strong, with a rich taste and a slight sourness. I covered the jars with a thin blanket, the next day they almost cooled down, and the cucumbers completely changed color. This would be a great winter snack!

Tell me, please, 1 tsp. mustard and dill seeds for 3 liter jars or 1 tsp. in every liter jar?

This year I decided to try new canning recipes. The choice was made, I prepared it according to the hallen-bunny recipe. In my opinion, a good set of spices and a sugar-salt ratio for the marinade. I also liked that the amount of water is clearly indicated. Exactly 1.5 liters per 3 liter jar. I added a couple of oak leaves on my own. I won’t tell you about the result now, I’ll write about it closer to the November holidays. The recipe is not troublesome, everyone loves the spices.
