    Sift the flour into a bowl. Add salt. Mix everything together and make a well in the center of the flour.

    Pour activated yeast and olive oil into it.

    Knead an elastic, homogeneous dough. You need to knead for about 7-10 minutes until the dough begins to stick to your hands. If necessary, you can add a little more olive oil. Cover the bowl with a towel and leave the dough in a warm place for 45 minutes to rise.

    While the dough is rising, prepare the sauce. It’s better to use shashalik ketchup or something else with a slight tang. If you don’t have a ready-made mixture of Provençal herbs, you can make one yourself from dried thyme, rosemary and basil. Take medium-sized tomatoes, ripe, juicy and aromatic.

    Wash the tomatoes, make cross cuts. Pour boiling water over and leave for 1 minute. Then remove the skin from them.

    Now prepare the filling. The pizza got its name from the sausage of the same name, to which hot chili pepper is added. Therefore, it is better to use it for pizza. Chorizo ​​is suitable for replacement.

    Grate the mozzarella on a coarse grater. I use special semi-hard mozzarella cheese for pizza (not to be confused with soft mozzarella cheese in balls, although it can also be used like any other tasty and high-quality cheese).

    Knead the dough and roll it into a thin round cake with a diameter of about 30 cm.

This must be done immediately, before you add the filling, then it will be more difficult to do, and under the weight of the filling the dough may stretch and lose its shape. I roll it out first on the table, then immediately transfer it to parchment, and the parchment with the base to a baking sheet.

Recently, we have developed a family tradition - every Wednesday we make pizza (of course, sometimes we get lazy and order ready-made, but this happens rarely)). Pepperoni is especially popular in our family, so I paid attention to this recipe, and the pizza itself looks very appetizing in the photo. According to the dough: personally, my dough turned out to be very tight, although I measured everything strictly according to the recipe (I used a measuring cup and scales). I had to add water... I thought I had ruined the dough, it wouldn’t fit... But no, it did, it did very well (there are photos before and after). Advice - in order for the dough to reach the desired consistency, I advise you to add flour gradually, in small portions, and not “bang” it all at once (as I did))). By the way, there was enough dough for 2 pizzas. Regarding the sauce: I didn’t “puree” the sauce with a blender. I chopped the tomatoes finely, added all the ingredients (according to the recipe) and heated them in a frying pan. This option tripped me) I baked the pizza according to the recipe. It turned out delicious, thank you!
