  1. STEP 1

    STEP 1

How to bake pancakes with spinach? Prepare your food.

  2. STEP 2

    STEP 2

If you have frozen spinach, you need to give it time to thaw. If it’s fresh (like mine), you need to rinse it well under running water, tear off the excess stems and blanch in boiling water for 15 seconds, then squeeze well.

  3. STEP 3

    STEP 3

Now the grinding. If you want, you can use an immersion blender to chop the spinach. If you have a stationary blender, that’s also very good. We need to chop the leaves well. Place spinach and eggs in a blender bowl and blend well.

  4. STEP 4

    STEP 4

Add sugar, milk and flour and beat everything well again. Add flour gradually, in small portions, focusing on the desired consistency of the dough. Keep in mind that you may need a little more or less flour.

  5. STEP 5

    STEP 5

Check the consistency of the dough - it should be liquid, like thin pancakes.

  6. STEP 6

    STEP 6

Add vegetable oil, mix and leave the dough for 10-15 minutes - so that the gluten in the flour swells.

  7. STEP 7

    STEP 7

Start frying pancakes. Heat the frying pan well, before frying the first pancake, grease it with vegetable oil (later it is not necessary, since we have oil in the dough), pour in a ladle of dough and quickly distribute the dough in a circle in a circle. Bake the pancake over medium heat.

  8. STEP 8

    STEP 8

Turn the pancake over to the other side and cook until done. Next, bake all the pancakes in the same way.

  9. STEP 9

    STEP 9

These are the “greenbacks” I got, 15 of them. You can eat it with sour cream, you can wrap any filling inside. The result is a bright, tasty and aromatic dish.

  10. STEP 10

    STEP 10

    Bon appetit!

I've never made spinach pancakes before. I really wanted to try these unusual green pancakes. I kneaded the dough as in the recipe with the same proportions, only there was 120g of spinach in the bunch, but I think this is not significant) I beat the spinach in a blender with an egg, but the mass remained interspersed with greens. Perhaps it was necessary to blanch longer, but I was afraid that the greens would become too soft, after all, this was the first time I did it. In principle, the heterogeneity of color did not bother me, it’s also beautiful) I baked pancakes in a grill pan with a diameter of 26 cm. I got 16 pieces. The pancakes are large, in the end I cut them into four parts, it’s easier to eat. The pancakes are beautiful, especially since I still got grill strips. The taste is neutral, you can't taste the spinach at all. But they are not sweet either, so you can easily wrap some savory fillings. You can also eat it with jam or honey. We ate it with sour cream and ketchup. I even wrapped the cutlet in a pancake) In general, they are universal. I liked the color the most, it looks impressive. Thanks for the recipe!

I made pancakes with spinach according to this recipe, made it from fresh spinach, I had to add more flour than indicated in the recipe, but it turned out very tasty))) I really liked the baking process. The only nuance is that I had to wash the spinach all over the kitchen 🤣
