Pancakes with cheese on kefir

STEP 1
Let's prepare the ingredients according to the list. Beat chicken eggs into a bowl, add salt to taste, you need to keep in mind that cheese is usually quite salty, so it is important not to oversalt the pancake dough. Beat the ingredients until the mixture is homogeneous in consistency.
STEP 2
We combine room temperature kefir with the egg mixture (if you don’t have time to wait for the kefir to naturally heat up, you can burn it in the microwave, 15 seconds is enough), add baking soda, not slaked with vinegar, and mix the mixture again.
STEP 3
Sift the wheat flour and add it to the bowl with the liquid, add the flour in small batches, mixing the dough. You may need a little more or less flour than the amount indicated in the ingredients. Because the density of flour varies from manufacturer to manufacturer; in addition, the fat content and thickness of kefir also affects the quality of the dough.
STEP 4
Mix the dough until smooth.
STEP 5
Hard cheese can be used of any type according to taste and availability, the main thing is that it is natural (melted) and fresh. You can use several different varieties, if available, to get a brighter, rich, cheesy flavor in the pancakes. Grate the cheese. Wash fresh herbs (dill, parsley, cilantro), dry with paper towels and finely chop with a knife.
STEP 6
Place the prepared cheese and herbs into the bowl with the pancake batter and stir so that the additives are evenly distributed throughout the liquid.
STEP 7
Pour vegetable oil into a frying pan and heat well. Spoon a tablespoon of dough into small round pancakes. If you want the pancakes to be smooth and fluffy, you can pour the dough through special cooking rings.
STEP 8
Fry the pancakes over medium heat on one side for 2-3 minutes, then turn them over and let them brown on the other side. Remove the pancakes from the pan onto a napkin to absorb excess oil. Place the pancakes on a plate and serve with sour cream, mayonnaise or other sauce to taste. Bon appetit!
