You can add a little flavoring, vanilla sugar or vanillin (read the instructions, incorrect use of vanillin can add bitterness to the dish). The amount of sugar can be adjusted to your taste. Keep in mind that the amount of sugar in this recipe will depend on the acidity of the kefir. If you are not sure, add sugar in steps 2 and 4.

    Add sifted premium wheat flour, pour in vegetable oil, beat with a whisk or mixer at low speed. It is best not to beat the dough with a fork, as lumps will form in it. The dough should be like very liquid sour cream. If necessary, adjust the amount of flour up or down. If you are adding sugar in parts, now is the time to add the second part of the sugar, adjusting to your taste (I usually taste the dough).

After the specified time, pour boiling water into the dough and immediately mix with movements from bottom to top, lifting flour from the bottom. Never pour boiling water into an egg mixture that has not yet been filled with flour. In many cases, it is because of the boiling water that the kefir separates and the dough turns out with small grains of custard; in another case, the boiling water causes the egg mass to curdle. It's better not to take risks!

    If necessary, you can add a little more boiling water - look at the consistency of the dough, it should not be too thick. After boiling water, add 2 pinches of soda to the dough - no more than a quarter of a teaspoon, so as not to spoil the taste of the dish! Stir gently.

    Warm the pan on the stove by turning on medium heat, grease it with oil for the first time and pour in a portion of the batter, swirling the pan. Fry until the edges are dry and turn over - during the baking process you will see how the pancakes become lacy and lacy.

I think it's worth buying a new soda. The author was absolutely right that you should focus more on your dough and the quality of flour. I added a little more boiling water in the end, otherwise these would have been thick pancakes) But the rest of the recipe deserves attention)

I baked lacy pancakes with kefir. I warmed the kefir slightly, added soda to the kefir, mixed well so that the soda was extinguished and the finished pancakes did not have its aftertaste. I needed the pancakes to be stuffed with meat filling, so I reduced the amount of sugar to one dessert spoon. Otherwise, I did not deviate from the recipe. The pancakes turned out excellent, tasty, thin, with a small hole. Thanks to the author for the recipe!
