Okroshka rich
An easy-to-make soup but packed with flavor. Okroshka can be called a real decoration of the summer table - not a single summer of the year can go without it. At least in the families of those people who love Russian cuisine. A dish called okroshka “rich” is somewhat different from the traditional method of preparing okroshka, and therefore can add welcome variety to the menu. The whole secret lies in the use of three types of meat products, as a result of which the food turns out to be quite satisfying, despite the fact that it remains light like summer.
Step-by-step preparation
Cooking time: 2 hr
STEP 1
Ingredients
STEP 2
Finely cut the prepared boiled meat and ham into cubes,
STEP 3
chop the mushrooms.
STEP 4
We also cut fresh cucumbers. We thoroughly chop the fresh herbs, then combine them with salt and begin to grind until the juice appears.
STEP 5
Mix the green mass with sour cream. Combine all the chopped vegetables and meat with each other, mix carefully and place on plates.
STEP 6
Fill with kvass and add chopped boiled eggs. Add green sour cream dressing to taste.
STEP 7
I add that the dish is quite filling, and therefore it is best served for lunch.

And here is a photo of this dish. It took 30 minutes to prepare the boiled meat. It took 7 minutes to cut the food. That is, the total preparation cost 40 minutes. Only I didn’t have enough potatoes in the dish... I got used to okroshka with potatoes.

Oh, you are so smart! This is a really RICH okroshka, I would say from the master's table =))) I will definitely try to make the same - I will surprise the young man. Yes, it seems to me that you can eat it as a salad, if you don’t add kvass. I really liked your photo with the KHRUMKA sausage, it turned out very funny!

Interesting, I’ll have to try it when summer fully comes into its own! Frankly speaking, I have never tried okroshka with kvass, but I like the idea with such a composition of meat in it; it can really become a tasty, satisfying, thirst-quenching and, most importantly, healthy lunch! Thank you!

Great recipe, a little baked potato wouldn't go amiss. And add mustard for spiciness. At our house, okroshka is poured with homemade kefir diluted in half with soda.
