STEP 1

How to make oatmeal? Prepare the necessary ingredients. You can take oatmeal of any grind: rolled oats or extra. If you take rolled oats, you will additionally have to beat the mass with a blender.
STEP 2

Grind flax seeds in a coffee grinder.
STEP 3

Pour oatmeal and ground flax seeds into a deep bowl.
STEP 4

Pour in water and add cane sugar. If you serve oatmeal with a salty filling, do not add cane sugar at all, or add only a pinch.
STEP 5

Fill the contents of the bowl with water so that it covers the flakes, but not more than 0.5 cm. Mix everything thoroughly. After stirring, it turned out that there was not enough water, so I added a little more. There shouldn't be too much water, but just enough so that the oatmeal swells without forming a lump. Leave to swell for 10-15 minutes. After swelling, the mass should be viscous, but fluid.
STEP 6

If you are using coarse flakes, lightly grind the mixture with an immersion blender, but not until smooth. If the flakes are finely ground, like mine, then a blender is not needed. Add a mixture of baking soda and citric acid and mix well. The mixture will begin to hiss and foam slightly.
STEP 7

Grease the frying pan a little with vegetable oil and heat it over low heat. Add half of the oat-flax mixture and smooth with a spatula, forming a thin, even round pancake. Bake the oatmeal pancake until the moisture has completely evaporated. The bottom of the pancake should be well fried. It is better to bake pancakes in a non-stick frying pan so that the pancakes do not stick to it.
STEP 8

Then turn it over to the other side and fry until cooked. Transfer the finished pancake to a plate, grease the pan again with oil and fry the second pancake.
STEP 9

You can serve oatmeal pancakes with different fillings, sweet or savory. I served it with curd cream and fruit. Bon appetit!
