Oatmeal pumpkin muffins
Bright, healthy and delicious pumpkin muffins! Oatmeal pumpkin muffins have a pleasant spicy flavor and a beautiful yellow color. In my opinion, there is little pumpkin in them and a good taste of apple and cinnamon. Oatmeal becomes very soft during baking. The structure of the cupcakes is porous. Fragrant pumpkin muffins are good served with fragrant herbal tea or milk.

Step-by-step preparation

Cut 105 grams of pumpkin and apple into cubes. Leave 20 grams of pumpkin for decoration.
STEP 3

Mix dry ingredients: flour, rolled oats, sugar, baking powder, spices, salt.
STEP 4

Place the pumpkin and apple in a blender, add the egg and beat. There is no need to puree it; there should be small grains in the mass.
STEP 5

Transfer the resulting mass into a bowl, add vegetable oil, and mix.
STEP 6

Add the dry ingredients and knead the dough to the consistency of thick sour cream.
STEP 7

Fill the portion molds with dough to 2/3 of the height. Cut the remaining pumpkin into small cubes and place on top of each ramekin. Place a piece of walnut in the middle of the cake.
STEP 8

We bake cupcakes at 180-200 degrees. about 30 minutes until golden brown. Cool and serve.
