Oatmeal Pie

Crumbly dough and cherry plum are a beautiful and tasty combination. I have long wanted to bake a pie with such a beautiful top of quartered plums. But I didn’t get around to plums, because the other day I saw a cheap, almost free, red cherry plum. This is the second year we won’t have a cherry plum harvest, so we have to buy it.

  1. STEP 1

    STEP 1

Dough. To prepare the pie dough we will need: wheat flour, oatmeal, butter, brown sugar (can be replaced with regular sugar), cinnamon and salt. You will learn all the intricacies of making shortcrust pastry from the article at the end of the recipe.

  2. STEP 2

    STEP 2

Cut the cold butter into cubes.

  3. STEP 3

    STEP 3

Place wheat and oat flour, pieces of butter, cane sugar, cinnamon and salt into the bowl of a blender or food processor with a knife attachment. Beat everything into fine crumbs. You may need a little less or more flour. Read about the properties of flour and how to add other types of flour to it in the articles below the steps.

  4. STEP 4

    STEP 4

Pour the resulting crumbs into a bowl and place in the refrigerator.

  5. STEP 5

    STEP 5

Filling. To prepare the pie filling we will need: cherry plum and brown sugar.

  6. STEP 6

    STEP 6

Wash the cherry plum and dry it. It is better to choose dense, but not green fruits, so that during baking they retain their shape and do not spread. The same applies to plums, if you decide to replace cherry plums with them.

  7. STEP 7

    STEP 7

Cut the cherry plum in half and remove the seeds. Cut each half into two more pieces.

  8. STEP 8

    STEP 8

Place all the shortbread crumbs in a parchment-lined baking dish (I have a square 25×25 cm, but you can take a larger one) and smooth it out.

  9. STEP 9

    STEP 9

Place cherry plum quarters on top. Sprinkle it evenly with 1 tbsp. l. cane sugar.

  10. STEP 10

    STEP 10

Place the pan in an oven preheated to 180°C for 30-35 minutes. Time and temperature are approximate, be guided by the operating characteristics of your oven. You can learn more about how ovens work by reading the article on this topic at the end of the recipe.

  11. STEP 11

    STEP 11

Remove the finished pie from the mold, cool and cut into portions. Bon appetit!

I liked the oatmeal pie for its filling. I collected yellow cherry plums and peeled them from the seeds. I kneaded the shortbread dough as described in the recipe using two types of flour. I just grated the cold butter, dipping it into flour. I made a ball of dough and refrigerated it. Then, deviating slightly from the recipe, I rolled out a layer of shortcrust pastry. I sprinkled a little starch so that it would retain the juice of the berries. I laid out the cherry plum and sprinkled it with regular sugar and cinnamon. The edges were slightly rolled up, like in a biscuit. I baked the pie for half an hour at 180 C. I cut the completely cooled pie into portions. It turned out very tasty and beautiful. There were a couple of pieces left in the morning) The dough came out crumbly and crispy. The filling is juicy, aromatic and sour. Great recipe! Thanks to the author)
