Oatmeal muffin with lingonberries

A real treat for adults and children. This year I’m trying to bake pies and muffins with oatmeal more often. They turn out completely different than with the usual wheat - more crumbly, soft, velvety in texture. The same cupcake can be baked with any other winter and summer berries - currants, cranberries, blackberries.

    Prepare the ingredients. To prepare oatmeal cake with lingonberries we will need: wheat flour, oat flour, soft butter at room temperature

    In a bowl, combine soft butter and sugar. Beat with a mixer until fluffy.

    Add eggs one at a time, beating after each egg.

    The result should be a fairly fluffy mass.

    Pour in kefir and beat again until smooth.

    Sift oatmeal and wheat flour with baking powder. Pour the flour into the dough. You can add it in parts, I usually add most of the flour (all oatmeal, and about half the wheat flour) and gradually, little by little, mix it in with a mixer. And based on the resulting consistency of the dough, I see if I need to add the rest of the wheat flour.

    The result should be a fairly thick, homogeneous and aromatic dough.

    Sort out the lingonberries, rinse and dry on a towel.

    Pour the berries into the dough and mix gently with a spatula so as not to crush the berries and they are evenly distributed throughout the dough.

    Pour the dough into the cake pan and smooth it out. I used a silicone mold, so I didn’t grease it with anything - the finished cake came out of the mold perfectly. If the mold is glass, ceramic or steel, then it needs to be greased with butter and preferably sprinkled with flour. Bake the cake for about 35 minutes at 180°C.

    Cool the finished cake slightly, remove from the pan and sprinkle with powdered sugar. Cut the cake into pieces and serve. Bon appetit!

Good day! Today I made a cupcake using this wonderful recipe. In general, I really love baking with oatmeal. That’s why I prepare a lot of it at once. The dough with the addition of oatmeal has a unique structure, it is very soft, pliable, and it is a pleasure to work with it. In this case, in the absence of lingonberries, I used fresh red currants. I would like to note that it is better to get not only butter, but also kefir and eggs in advance so that everything is at room temperature, otherwise the desired fluffiness may not be obtained when whipping. Since my oven is quite old and does not bake well, the baking time took a little more than 35 minutes. The aroma was unimaginable! The smell of oatmeal baking is so inviting!
