    Prepare all the necessary ingredients for making sausage muffins. Take premium flour, C1 eggs. Choose whatever sausage and cheese you like best. Parsley and dill are suitable as greens. You can take just one thing.

    To prepare the dough, take a deep bowl. Wash the eggs with soap and break them into this bowl. Beat with a fork or whisk. There is no need to whip until foam forms. Turn on the oven to preheat at 180 degrees.

    Melt the butter and cool. This can be done in the microwave or in a small bowl on the stove at low temperature, after cutting it into small pieces. Stir the oil and pour it into the egg mixture, add kefir. Mix everything until smooth.

    Now take a larger bowl. Keep in mind that you will add the filling to the same container. Sift most of the flour and baking powder into it, stir so that the baking powder is evenly dispersed throughout the dough and it rises evenly. Sifting the flour is necessary in order to saturate the dough with oxygen and make it more airy.

    Pour the liquid portion of the dough into the dry portion. This sequence is needed to make the dough more successful. Mix everything well and, adding sifted flour in small portions, achieve the desired dough consistency. It should turn out like thick sour cream. Due to the fact that flour of the same type, but from different manufacturers, may differ in properties, this may affect the amount of flour required.

    While the dough is resting, prepare the filling. Cut the sausage into small cubes. Grate half the cheese on a fine grater, cut the other half like sausage. This way of cutting the ingredients will allow them to be evenly distributed throughout the dough. Wash the greens under running water and dry on a towel or napkin. Trim off the tough parts and chop the greens with a knife.

    Use muffin and cupcake tins for baking. There is no need to grease the molds with anything, since there is enough oil in the dough. Fill them 2/3 full to leave room for the dough to rise. Bake for 30-35 minutes on the middle shelf of the oven at 180 degrees. Please note that cooking time depends on your oven and the size of the pans. The finished muffins will rise and brown. When lightly pressed with your palm, the dough should not “walk”.

I made muffins with sausage and cheese for breakfast. I made it for 16 servings. Eggs used category C1. Flour of the highest grade. I had a little more than 60 grams of butter left. The missing amount was replaced with vegetable oil (9 tbsp). I used kefir with a fat content of 3.2 percent. Baking powder was replaced with soda (1 tsp). My kefir was not very sour, I was afraid that it would not quench the soda, so I added an additional teaspoon of lemon juice to the liquid component. I prepared muffins in homemade foil molds with a diameter of about 6.5 cm (made from four layers). The muffins were baked at 180 degrees for 35 minutes: 30 on the middle level of the oven and another 5 minutes on the top one. The muffins turned out fluffy and beautiful. They are filling and very tasty. Great option for breakfast! From the suggested amount of ingredients I got 15 muffins. Thank you very much for the recipe!
