I decided to make minced meat cutlets with semolina from scraps of pork meat. As for spices, I used only ground black pepper and did not add dill. The resulting minced meat was left in the refrigerator overnight, during which time the semolina swelled well and the minced meat stabilized. I fried the cutlets in flour a little longer than indicated in the recipe. The result was beautiful, appetizing cutlets, semolina is not noticeable at all, and even somehow emphasizes the taste of the meat (and it also seemed to me that with it the cutlets were denser in consistency than with the addition of bread).
