Mexican Fajitas in Tortilla

Let's start by preparing the tortilla dough. Mix the dry ingredients in a deep bowl first. Then add warm water and stir. At the end add 2 tbsp. vegetable oil and knead the dough well. Tortilla is an unleavened flatbread made from wheat flour, similar to the usual pita bread, often used in Mexico (and not only) instead of bread, and also serves as the basis for preparing other dishes, such as burritos and various casseroles.

In general, a universal flatbread in which you can wrap your favorite foods and make, for example, homemade shawarma. The dough turns out soft, elastic, not clogged with flour. It took me about 5 minutes to knead. Transfer the dough into a bag so as not to overheat. Let him rest for 20 minutes.
STEP 4
Let's start preparing the filling. The meat (I have pork shoulder, you can replace it with chicken or beef) must first be marinated, but first it must be cut into steaks, then into strips of approximately the same size. Place in a bowl.

Wash the lime and cut it in half. Squeeze the juice of half a lime onto the pork (you can replace it with regular lemon). Add 2 tsp. dry garlic and 0.5 tsp. cumin optional. Mix with your hands. Add 2 tbsp. vegetable oil.
STEP 6
Finely chop the hot red pepper, sprinkle with salt and chop again. Then mash with the flat side of a knife into a puree. Add the ground pepper along with the juice to the pork and mix well, do a so-called massage so that all the spices and pepper marinate the meat well.

Peel the red onion and cut in half. Then cut each half into slices. Wash the bell pepper, cut in half, remove seeds and cut into strips like this.
STEP 8
Rooster tail, also known as Pico de Gallo, is a delicious hot sauce. For it, cut the peeled red onion into small cubes. Finely chop the red hot pepper with the onion. Finely chop a small bunch of cilantro too. Mix everything in a deep bowl.

Squeeze the juice from 1 lime. The onion will become softer in taste.
STEP 10
Cut the tomato into thin half rings, then into strips and into small cubes. Transfer to a bowl. Add a little sugar - this slows down the effect of hot pepper on the tongue.
STEP 11
Mix well. The sauce is ready.
STEP 12
Now let's make tortillas. Place the dough ball on a floured surface. Make a sausage and divide the dough into 5 parts.

Then roll each piece with a rolling pin into thin flat cakes with a diameter of approximately 20-25 cm.
STEP 14
Place one flat cake at a time in a well-heated dry frying pan. Fry for about a minute on each side. Focus on the color of the tortilla. It should be pale with small crispy spots. If you overdo it, the cake will become stale. I usually fry one tortilla while rolling out the other one. Very comfortably.
STEP 15
Place the finished cake on a sheet of foil. Do the same with the rest. Cover the finished tortillas with a layer of foil to keep them warm when serving.
STEP 16
Pour 2 tbsp into the frying pan in which the flatbreads were prepared. vegetable oil and heat well. Throw in the chopped onion and sweet bell pepper. Fry over high heat, stirring constantly until the vegetables are slightly burnt in places. Place in any container.
STEP 17
Next, pour about 1 more tablespoon into the same frying pan. butter and add meat. Fry just as quickly.
STEP 18
Meat cannot be fried with vegetables, the cooking time varies.
STEP 19
Now add pepper and onion to the meat and heat well.
STEP 20
All ingredients are ready! Place the filling on the flatbread and sprinkle with chopped cilantro.
STEP 21
Place Pico de Gallo sauce and sour cream separately next to it. In this case, each of the family or guests will put the required portion of hot sauce and sour cream on the filling.
