    To make marshmallows you need applesauce. You can take ready-made store-bought puree or prepare it yourself (bake the apples in the oven, peel and grind into puree). Add sugar (250 g) and vanilla sugar to the applesauce, let stand. If you use ready-made puree, you can reduce the amount of sugar.

    Soak the agar in water according to the instructions on the package. Let it sit as long as needed. Then put it on the fire and bring it almost to a boil. It is necessary for the agar to dissolve and that’s all. Add sugar (475 g) and stir. Cook the mixture over medium heat, stirring until a spatula lifted from the syrup pulls the “sugar thread”. Leave the syrup to cool slightly.

    Add half the egg white to the applesauce. Beat with a mixer until the mixture lightens. Then add the remaining egg white and continue beating.

    Beat the applesauce with the egg white until the mixture becomes white and fluffy. While whipping, pour the slightly cooled agar syrup into the mass. At this stage, you should already have a baking sheet lined with parchment and a pastry bag prepared.

    Quickly transfer the mixture into a pastry bag and pipe marshmallows onto the parchment. This must be done quickly, as the mass hardens. From such a quantity of products you get a lot of marshmallows, so you need to prepare a place for them in advance.

    Leave the marshmallows to dry at room temperature for at least a day (in my opinion, they taste better and are more like store-bought ones when they sit a little longer). Sprinkle the finished marshmallows with powdered sugar through a strainer and glue the halves together. This is easy to do because the bottom of the marshmallows is sticky.

    Part of the marshmallow can be poured with chocolate glaze (to do this, take dark or milk chocolate, melt it in a water bath or in the microwave). Place the marshmallows with glaze in the refrigerator to harden. Now you can drink tea and enjoy the delicate taste of marshmallows!
