Mannik can be baked using only semolina, then the manna will be more tender and crumbly, or you can use semolina and wheat flour in equal parts, the manna will taste more dense. You can use additives such as candied fruits, dried fruits, nuts, berries, pieces of fruit and others to taste.

    Place the butter in a bowl and melt it in a water bath or in the microwave. Let the melted butter cool to room temperature.

    Add sugar and a pinch of salt to the bowl with butter. Stir the ingredients until the sugar cools completely. You can add sugar and salt to the butter while the butter is warm, then the former will dissolve faster.

    Pour the sour milk into another bowl; it should be at room temperature. Pour in the semolina, mix and leave at room temperature for an hour so that the semolina swells well.

    In the third bowl, beat the chicken egg with a fork or whisk until the white of the chicken egg is completely dispersed. Pour the melted butter and egg mixture into the bowl with the semolina. Mix.

    Add baking powder (baking powder can be replaced with baking soda slaked with vinegar), a pinch of vanillin and add sifted wheat flour if using it for baking. Mix the ingredients thoroughly until the dough is homogeneous in texture, without lumps. It turns out to be a very thick dough.

    Grease the baking dish for semolina with oil and sprinkle the bottom and walls with semolina. Pour the dough into it so that it fills the mold no more than halfway. Preheat the oven to 180 degrees. Bake the manna for about 30 minutes. You can check the readiness of the manna with a wooden skewer. It should come out dry.

Our family loves manna, and I love them for their ease of preparation. Mannik with sour milk turned out very tasty and juicy! To prepare it, I used homemade fermented milk. It was very thick, so I thinned it a little with warm water. I took two small eggs. And for more flavor I added lemon zest. The dough was also infused for an hour, first semolina with sour milk, and then a little more all together. Thanks to this, the cake turned out fluffy, porous and at the same time did not lose its moisture. I baked it in a rectangular cake pan. The mannik turned out delicious and the whole family liked it!
